This recipe is enjoyed throughout Central America. I serve Carne en Adobo over this rice dish. It also makes an excellent side dish.

Ingredients
- 1/4 pound salt pork, sliced
- 1 teaspoon achiote or annatto seed
- 2 medium green peppers, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup long grain rice
- 1 tablespoon capers
- 2 cups water
- 1/2 teaspoon salt
- 2 medium tomatoes, chopped
- 1 cup fresh or frozen peas
How To Make rice with peas

Step 1In a large skillet, cook the salt pork till crisp. Remove, drain, and crumble. Reserve drippings.

Step 2Cook the achiote or annatto seed in the drippings for 5 minutes; discard achiote or annatto seed.

Step 3To the drippings, add the green peppers, onion, and garlic; cook till tender. Stir in the uncooked rice, capers, 2 cups water, and 1/2 teaspoon salt. Cover; simmer for 10 minutes.

Step 4Stir in the tomatoes and peas. Cover and simmer 10 minutes more or until the rice is done. Stir in the crisp salt pork.
