Another salad recipe from an old salad book from 1978. Just made this salad and its delicious. This salad is very good for a BBQ.

Ingredients
- 6 cups cooked rice
- 1 - onion ; minced
- 1 cup chopped celery
- 2 slices bacon ; cooked & crumbled
- 1 cup sweet pickle relish
- 1 cup diced red pepper
- 6 - hard boiled eggs ; chopped
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 1/2 cups mayonnaise
- 2 teaspoons prepared mustard
- - lettuce leaves
- - cherry tomatoes
How To Make rice confetti salad

Step 1Blend all ingredients together throughly.

Step 2Serve on lettuce leaves and garnish with cherry tomato.

Step 3Note : one cup uncooked rice makes 3 cups cooked rice.
