Ingredients
- 3 cups hot cooked rice
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 1 dash kosher salt
- 1 dash crushed pepper
- 1/4 teaspoon garlic powder
- 1/2 cup dried bread crumbs
- 1/2 cup shredded parmesan cheese
- 1/4 cup diced onions, (optional) (i don't use onion)
How To Make rice balls

Step 1In a large mixing bowl, add garlic powder, rice, mozzarella cheese, eggs, salt and pepper, mix well. Let stand for 15 minutes at room temp to achieve forming consistency.

Step 2With your hands, make 1-2 inch balls out of the mixture. In a medium shallow dish mix dried bread crumbs with parmesan cheese and blend. Roll the rice balls in mixture, coat evenly. Place the rice balls on a non-stick cookie sheet.

Step 3Preheat oven to 425 degrees and bake for 17-20 minutes or until golden brown. Serve as an appetizer with alfredo or marina sauce. This dish goes nicely with a plate of fresh sauteed vegetables.
