Ingredients

  • 3 c
    hot cooked rice
  • 1 c
    shredded mozzarella cheese
  • 2 large
    eggs
  • 1 dash(es)
    kosher salt
  • 1 dash(es)
    crushed pepper
  • 1/4 tsp
    garlic powder
  • 1/2 c
    dried bread crumbs
  • 1/2 c
    shredded parmesan cheese
  • 1/4 c
    diced onions, (optional) (i don't use onion)

How to Make Rice Balls

Step-by-Step

  1. In a large mixing bowl, add garlic powder, rice, mozzarella cheese, eggs, salt and pepper, mix well. Let stand for 15 minutes at room temp to achieve forming consistency.
  2. With your hands, make 1-2 inch balls out of the mixture. In a medium shallow dish mix dried bread crumbs with parmesan cheese and blend. Roll the rice balls in mixture, coat evenly. Place the rice balls on a non-stick cookie sheet.
  3. Preheat oven to 425 degrees and bake for 17-20 minutes or until golden brown.
    Serve as an appetizer with alfredo or marina sauce. This dish goes nicely with a plate of fresh sauteed vegetables.
