MAKES 12 SMALL PATTIES
Ingredients
- 1 cup quinoa
- 2 cups water
- 4 - eggs--beaten
- 1/3 cup parmesan cheese
- 3 - green onion--sliced thin
- 3 - garlic cloves--minced
- 1/2 teaspoon sea salt
- 1 cup steamed kale--chopped
- 1 cup bread crumbs
- 1 teaspoon olive oil

Step 1RINSE 1 C. OF QUINOA THOROUGHLY AND PLACE IN MEDIUM SIZE PAN WITH 2 C WATER, LET SOAK FOR 15 MINS. BRING WATER TO A BOIL THEN REDUCE TO SIMMER. COOK UNTIL QUINOA IS DONE AND HAS ABSORBED THE LIQUID--ABOUT 20 MINS. LET COOL TO ROOM TEMERATURE.

Step 2IN LARGE BOWL, MIX TOGETHER COOKED QUINOA, EGGS, PARMESAN CHEESE, ONIONS, SALT, STEAMED KALE & BREAD CRUMBS. LET EVERYTHING SIT FOR A FEW MINS. TO ABSORB LIQUID. YOU WANT THE BATTER TO BE MOIST, BUT NOT RUNNY. FORM PATTIES.

Step 3HEAT 1 TSP. OLIVE OIL IN LARGE SKILLET OVER MEDIUM LOW HEAT. COOK UP TO 6 PATTIES AT A TIME. COVER PAN AND LET COOK FOR 7-10 MINS, THEN FLIP PATTIES AND COOK SAME TIME FRAME UNTIL BOTH SIDES ARE NICE & BROWN.
