For some reason, Fish and Rice just seem meant for each other to me. I developed this recipe when looking for a kind of Fancy side dish to serve with some grilled Salmon. It is fast because it is based on a package of Uncle Ben's Rice Pilaf, which takes only 90 seconds in the microwave. With a five minute chop of veggies and a five minute saute, you can have a wonderful side.

  2. Chop all vegetables, keeping olives and sun dried tomatoes separate.
  3. Heat small skillet 8" to medium high and add oil or butter. When hot, add all veggies but the olives and tomatoes. Turn heat to medium and saute vegetables 5 minutes or until soft and barely starting to brown. When soft, turn heat to medium low.
  4. Add olives, tomato, and preheated Pilaf to skillet. Stir to combine and to reheat rice if needed. Sprinkle with toasted pinenuts if desired and serve.
