pam's fast n fancy rice pilaf

For some reason, Fish and Rice just seem meant for each other to me. I developed this recipe when looking for a kind of Fancy side dish to serve with some grilled Salmon. It is fast because it is based on a package of Uncle Ben's Rice Pilaf, which takes only 90 seconds in the microwave. With a five minute chop of veggies and a five minute saute, you can have a wonderful side.

Ingredients

  • 1 package uncle ben's 90 second rice pilaf
  • 1/2 - shallot minced
  • 2 small roasted garlic cloves mashed
  • 2 - scallions white and part of green, sliced fine
  • 10 - snow peas, jullienned on the bias (use more or less as desired)
  • 1/4 cup fine chopped celery
  • 6 - pitted green olives chopped
  • 4 - pieces of oil cured sun dried tomato chopped fine
  • 1 tablespoon butter or oil (use oil for vegetarian option)
  • - toasted pine nuts (optional)

How To Make pam's fast n fancy rice pilaf

  • Step 1
    Microwave the Uncle Ben's Rice pilaf as directed. Set aside.
  • Step 2
    Chop all vegetables, keeping olives and sun dried tomatoes separate.
  • Step 3
    Heat small skillet 8" to medium high and add oil or butter. When hot, add all veggies but the olives and tomatoes. Turn heat to medium and saute vegetables 5 minutes or until soft and barely starting to brown. When soft, turn heat to medium low.
  • Step 4
    Add olives, tomato, and preheated Pilaf to skillet. Stir to combine and to reheat rice if needed. Sprinkle with toasted pinenuts if desired and serve. Serve
