not traditional dirty rice

I love dirty rice but younger kids are usually not crazy about chicken livers or gizzards so I have come up with this recipe that mimics traditional dirty rice without the livers/gizzards but with a ton of flavor. If you like a more spicy version just add your favorite hot sauce, cayenne pepper or spicy peppers to the rice. Enjoy!

Ingredients

  • 1 tablespoon each of canola oil & butter
  • 1/2 medium zucchini (1/4 cup)
  • 1/2 large yellow onion, diced
  • 1/2 medium red bell pepper, diced
  • 1 large celery stalk, diced
  • 1 clove garlic, minced
  • 1 tablespoon worcestershire sauce
  • 1/4 cup red wine
  • 1 1/2 cups water
  • 1 - bay leaf
  • 1 teaspoon onion powder
  • 1 teaspoon mrs. dash garlic and herb blend
  • 2 teaspoons red pepper flakes
  • 1 teaspoon poultry seasoning
  • 1 teaspoon ground sage
  • 2 pinches salt and pepper
  • 2 cups brown rice, quick cooking

How To Make not traditional dirty rice

  • Step 1
    In 3 quart pot heat canola oil and butter until butter is melted.
  • Step 2
    Add diced onion, pepper & celery & zucchini to the oil and saute until softened about 2-3 minutes.
  • Step 3
    Add garlic, worcestershire sauce, bay leaf, onion powder, mrs. dash, red pepper flake, salt and pepper. Let simmer for 2-3 minutes so flavors develop.
  • Step 4
    Add rice and bring back to a boil then turn down to a simmer for 5 minutes according to the box directions. Serve as a side dish with chicken, fish or seafood.
