MOCK POPEYe'S RED BEANS AND RICE

1/2 tspchili powder
1 tspgarlic powder
1/4 tspwhite pepper
1/4 tspcayenne pepper
1 can(s)large light kidney beans 16oz(do not drain)
1 can(s)seasoned pinto beans 16oz(do not drain)
2 can(s)refried beans
2 cinstant rice (cook according to directions)
How to Make MOCK POPEYe'S RED BEANS AND RICE
- in large sauce pan, heat all the beans but do not boil. when well heated with masher gently mash kidney and whole pintos lightly do not over mash.
- stir in one at a time, of all the spices, mixing well with wire wisk after each addition.
- in six small cups fill 1/2 way with bean mixture and top with 1/4 cup of rice.serve hot.
- this will make for a mildly spicy red bean and rice cup. if you like it more spicy add a little more cayenne pepper or a shot of hot sauce.
