mexican essentials: easy/peasy spanish rice

Served my Beef Birria for Sunday brunch and made some Spanish rice to go with it. The rice has some standard ingredients, with one or two of my own. Everyone loved it, and all plates came back to the pantry clean. After trying this recipe, you will think twice about using the boxed variety. So, you ready… Let’s get into the kitchen.

Ingredients For mexican essentials: easy/peasy spanish rice

  • PLAN/PURCHASE
  • 1 Tbsp
    olive oil, extra-virgin variety
  • 1 Tbsp
    sweet butter, unsalted
  • 1 c
    long-grain white rice
  • 1 c
    chicken stock, not broth
  • 3/4 c
    filtered water
  • 2 Tbsp
    tomato paste
  • 1 Tbsp
    mexican flavor base, link supplied in the notes
  • 1 md
    garden-fresh tomato, skin removed, seeded, then diced

    You will need a medium-size saucepan with a lid to make this recipe.

    Mexican Flavor Base My Mexican flavor base works great with this recipe, here is the link: https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/south-of-the-border-essentials-flavor-base.html If, however, you do not wish to make it, you can substitute the following spices, and continue on with the recipe as written. 1 1/2 teaspoons ancho chili powder 1 teaspoon ground cumin 1/2 teaspoon garlic salt 1/2 teaspoon dried oregano

    Gather your ingredients (mise en place).

    Whisk together the chicken stock, filtered water, tomato paste, and Mexican flavor base (or dried spices) together and reserve.

    Add the butter and oil to a saucepan over medium heat, then wait for the butter to melt and stop foaming.

    Add the rice and coat with the butter/oil mixture. Stir for about a minute or two.

    Add the reserved liquid, and diced tomatoes, then set the heat to medium low (just a simmer).

    Cover and allow to simmer for about 20 minutes.

    If you are using a different rice, other than long-grain white rice, follow the instructions on cooking time for that specific rice.

    After the cooking time is complete, remove from the heat, and fluff with a fork.
