mango coconut rice
I got this off a Paula Deen show when her sons were on. Its a totally different rice but it is so good. Yuuuuuuuuuummmmmmmmmmmy!!!!!!!

Ingredients
- 1 tablespoon olive oil
- 1 1/2 cups long grain rice,uncooked
- 1 can unsweetened coconut milk, 14 oz.
- 2/3 cup water
- 1 teaspoon salt
- 1 large ripe mango, peeled and cubed
How To Make mango coconut rice

Step 1In a large saucepan, heat the oil over medium-high heat. Add the rice and stir to coat with the oil. Add the coconut milk, water, and salt; bring to a boil. Stir in the mango. Cover; reduce heat to low, and simmer about 20 minutes or until the liquid is absorbed.

Step 2Remove the rice from the heat and fluff it with a fork. Place a clean, dry dish towel over the pan, Cover with the lid, and let steam for 5 minutes before serving.
