An amazingly delicious rice side dish for any bbq occasion.

Ingredients

  • 2 cups basmati rice
  • 2 cups water
  • 2-3 tablespoons coconut oil
  • 1 small onion, chopped (approx 1/2 cup)
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic,minced
  • 1/2 cup ham, small cubes
  • 1/2 cup shredded coconut (not sweetened) or freshly grated coconut (reserve some for garnish)
  • 1-2 teaspoon chicken bouillon powder
  • 1/4 teaspoon white pepper or to taste
  • 1 cup fresh pineapple, chopped (or can use canned)
  • - macadamia nuts, chopped (for topping)
  • - green onions, sliced on the diagonal (reserve some for garnish)

How To Make luau rice

  • Step 1
    Wash rice thoroughly and add to saucepan along with 2 cups water. Allow rice to completely cool and place in the refrigerator; preferably overnight.
  • Step 2
    Toast coconut in a non-stick skillet until it is toasty brown. Remove and set aside.
  • Step 3
    Place coconut oil, onions, garlic and ginger in the pan - cook until they begin to release their aroma. Add the ham and cook until golden brown.
  • Step 4
    Add cooked rice, bouillon powder and white pepper and mix quickly in your pan until all of the rice is covered evenly with coconut oil and seasoning. Add the pineapple, green onions and toasted coconut into the mixture and continue stirring, just until warmed. Serve topped with macadamia nuts, toasted coconut and green onions.
