kato's leftover rice
Looking in the fridge tonight, I wondered what would go well with the sweet and savoury Maple Peameal Bacon Roast I planned to prepare for tonight's dinner. It is one of my husband's favourite meals and is very flavourful. I wanted something that would complement the meat while still holding its own on the plate. Something that can be paired with most dishes. The rice was made with only a few ingredients. The texture was nice, and it had a good flavour. Best of all, it used leftover rice. This comfort dish was on the table in no time. I hope you will enjoy this simple dish.

Ingredients
- 4 slices bacon, chopped 1 inch pieces
- 2 cups cabbage, coarsley chopped 2 inches
- 1/3 red onion, chopped 1/2 inch pieces
- 1 1/2 teaspoons sea salt
- 3/4 teaspoon freshly ground black pepper
- 3 cups leftover rice, (jasmin, basmati or long grain)
How To Make kato's leftover rice

Step 1Heat your pan on medium heat and add the chopped bacon, cooking till just crisp, about 5 minutes. Remove the bacon and set it aside until needed.

Step 2Add the chopped cabbage to the bacon drippings in the pan and coat well. Allow the cabbage to fry for 5 - 10 minutes until it softens to your liking, stirring often.

Step 3Next, add the chopped onion and continue cooking until the cabbage starts to brown and the onion is transparent, about 5 minutes.

Step 4You are almost done. Add the rice, stir well, and allow to cook for 5 minutes.

Step 5Then add the reserved bacon pieces, stir well, and cook 5 more minutes, until the rice is heated to your liking.

Step 6Taste and reseason to your liking if necessary. Remove from heat and enjoy.
