joe’s favorite garlicky rice~

Our 11 year old is such a picky eater we have a hard time finding anything to make for him that he will eat, but this is one of the things he’ll ask for again and again! He loves plain rice and he loves garlic so he suggested that I put them together and this is what I came up with… It goes great with chicken or steak or if you’re like Joe, with a slice of Stater Bros. (Our favorite grocery store) Frozen Pepperoni Pizza~ oh well, at least he’s eating.

Ingredients

  • 1 cup parboiled white rice
  • 2 cups water
  • 2 tablespoons margarine (i use completely non-dairy nucoa brand)
  • 2 - 4 cloves cloves of fresh garlic, minced (use more or less depending on how much you like garlic)
  • 1 tablespoon dry garlic, minced
  • 1 teaspoon garlic pepper salt

How To Make joe’s favorite garlicky rice~

  • Step 1
    Stovetop Method: In a 2-3 quart saucepan combine rice, water, margarine, and all the garlic varieties.
  • Step 2
    Stir just enough to mix.
  • Step 3
    Bring to a boil.
  • Step 4
    Reduce heat to low, cover and simmer for 20 minutes or until all the liquid is absorbed (this can take up to 40 minutes).
  • Step 5
    Fluff with fork and serve.
  • Step 6
    Microwave Method: Combine rice, water, margarine, and all the garlic varieties in a 2- to 3-quart microwave-safe container.
  • Step 7
    Cover and cook on high for 5 minutes.
  • Step 8
    Reduce heat to 50 percent power and microwave an additional 20 minutes or until all liquid is absorbed.
  • Step 9
    Let stand for 5 minutes more before serving.
  • Step 10
    Tips: Rinsing rice before cooking eliminates many of the nutrients and is not recommended. Peeking underneath the saucepan lid releases the steam and interrupts the cooking process. Stirring the rice after it has already reached a boil results in gummy rice.
