green rice /restaurant style

This recipe is from Mexican restaurant in Las Vegas at the Stations. This is so good I always get this in place of the white rice. Try it you will love it too!

Ingredients

  • 1 1/2 cups long grain rice
  • 2 teaspoons minced garlic from a jar
  • 3 cups vegetable broth
  • 1 or 2 medium ripe haas avocados
  • 1/4 cup fresh lime juice
  • 2 teaspoons lime zest
  • 1/2 to 1 cups fresh cilantro leaves (or baby spinach leaves)
  • 1/4 cup olive oil
  • 1 teaspoon cayenne pepper, or to taste
  • 1/4 cup chopped white onion
  • - tequila or water- as needed

How To Make green rice /restaurant style

  • Step 1
    Bring rice and vegetable broth to a boil. Reduce heat, cover and simmer for 20 minutes, until liquid is absorbed and rice is tender. Remove from heat let stand 5 minutes.
  • Step 2
    Combine in a blender the the avocado pieces, lime juice,lime zest and olive oil. Pulse a few times. Add cilantro and cayenne pepper if using. Blend until smooth, adding a little tequila as needed to make the mixture the consistency of dairy sour cream.
  • Step 3
    Stir the rice with a fork to fluff and add the chopped onions and garlic and dash of salt if desired. Stir avocado mixture into the rice and serve warm. If you like serve with a dollop of sour cream and sprinkle with chopped green onion tops.
