1/2 lborzo pasta, uncooked
2 Tbspfresh lemon juice
1/4 coil infused with garlic
dashsalt and pepper
6 ozkalamata olives, pitted and chopped
2 Tbspfresh oregano, chopped
2 Tbspfresh chives, chopped
1/3 ccrumbled feta cheese
2 Tbspfresh parsley
How to Make Greek Orzo
- Boil orzo as directed on the package (1/2 a pound of orzo was used for this recipe).
- Whisk the lemon juice and garlic-infused olive oil together. Season with salt and pepper in a medium-sized bowl.
- Add olives, oregano, and chives to bowl.
- When pasta has been cooked and rinsed, add it to the bowl. Stir to blend.
- Fold in the feta cheese.
- Garnish with parsley.
*This side dish should be served warm.
