Ingredients

1/2 lb
orzo pasta, uncooked
2 Tbsp
fresh lemon juice
1/4 c
oil infused with garlic
dash
salt and pepper
6 oz
kalamata olives, pitted and chopped
2 Tbsp
fresh oregano, chopped
2 Tbsp
fresh chives, chopped
1/3 c
crumbled feta cheese
2 Tbsp
fresh parsley

How to Make Greek Orzo

Step-by-Step

  • 1Boil orzo as directed on the package (1/2 a pound of orzo was used for this recipe).
  • 2Whisk the lemon juice and garlic-infused olive oil together. Season with salt and pepper in a medium-sized bowl.
  • 3Add olives, oregano, and chives to bowl.
  • 4When pasta has been cooked and rinsed, add it to the bowl. Stir to blend.
  • 5Fold in the feta cheese.
  • 6Garnish with parsley.

    *This side dish should be served warm.
