Ingredients

  • 2 tablespoons soy sauce
  • 1/2 teaspoon sugar
  • 1 tablespoon canola oil
  • 2 large eggs, well beaten
  • 1 medium carrot, finely chopped
  • 1 - celery rib, finely chopped
  • 1 - scallion, chopped
  • 1 teaspoon ginger
  • 1 clove garlic, minced
  • 2 cups cooked rice, cold

How To Make fried rice

  • Step 1
    In small bowl, combine the soy sauce, sugar and salt and pepper to taste. Set aside.
  • Step 2
    In large skillet, heat oil over medium high heat and cook eggs until scrambled. Transfer to a small dish.
  • Step 3
    In same skillet, add carrots, celery and scallions and saute for 3 minutes, stirring often. Stir in ginger and garlic and cook 1 minute longer. Add rice and stir fry 1 minute or until heated through, add soy sauce and eggs and stir fry 30 seconds longer. 5 points per serving
