Ingredients
- 2 tablespoons soy sauce
- 1/2 teaspoon sugar
- 1 tablespoon canola oil
- 2 large eggs, well beaten
- 1 medium carrot, finely chopped
- 1 - celery rib, finely chopped
- 1 - scallion, chopped
- 1 teaspoon ginger
- 1 clove garlic, minced
- 2 cups cooked rice, cold
How To Make fried rice

Step 1In small bowl, combine the soy sauce, sugar and salt and pepper to taste. Set aside.

Step 2In large skillet, heat oil over medium high heat and cook eggs until scrambled. Transfer to a small dish.

Step 3In same skillet, add carrots, celery and scallions and saute for 3 minutes, stirring often. Stir in ginger and garlic and cook 1 minute longer. Add rice and stir fry 1 minute or until heated through, add soy sauce and eggs and stir fry 30 seconds longer. 5 points per serving
