This quick and easy rice makes a great side dish to any BBQ as well as a dessert.

Ingredients

  • 2 cups short grain wild rice
  • 1 can coconut milk ( i got mine at a chinese store)
  • 1 can small crushed pineapple
  • - water if needed
  • OPTIONAL
  • 1/4 cup toasted coconut added at last second as topping

How To Make eric's island rice

  • Step 1
    Drain the pineapple reserving the liquid and set a side. Combine the coconut milk with the liquid from the pineapple and add water to equal 4 cups. Heat to boiling with rice and pineapple . simmer covered about 20 minutes until all the liquid is gone. serve hot or cold. if using as a dessert serve cold with vanilla, cinnamon or pineapple ice cream on top
