2 cshort grain wild rice
1 can(s)coconut milk ( i got mine at a chinese store)
1 can(s)small crushed pineapple
·water if needed
1/4 ctoasted coconut added at last second as topping
How to Make Eric's Island Rice
- Drain the pineapple reserving the liquid and set a side. Combine the coconut milk with the liquid from the pineapple and add water to equal 4 cups. Heat to boiling with rice and pineapple .
simmer covered about 20 minutes until all the liquid is gone.
serve hot or cold. if using as a dessert serve cold with vanilla, cinnamon or pineapple ice cream on top
