Ingredients

  • 1 teaspoon vegetable oil
  • 2 cups sliced mushrooms
  • 1 clove garlic, minced
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cumin seeds
  • 1 cup chicken broth
  • 1 cup fresh sliced green beans (or frozen and thawed)
  • 1/2 cup long grain white rice, uncooked
  • 4 slices canadian bacon, cut into thin strips
  • 1/4 teaspoon ground black pepper
  • - salt, to taste

How To Make curried rice and green beans

  • Step 1
    Heat oil in medium saucepan. Add mushrooms and garlic; cook and stir over medium-low heat about 5 minutes.
  • Step 2
    Add curry powder and cumin seed, if desired; cook and stir 30 seconds.
  • Step 3
    Add chicken broth; bring to a boil. Stir in green beans and rice. Reduce heat to low. Cover and simmer about 18 minutes or until rice is tender and liquid is absorbed.
  • Step 4
    Stir in Canadian bacon and pepper, and salt if needed. Heat just until bacon is hot.
