This rice is the best; it is full of flavor. I created it using my favourite seasonings. When made with Jasmine rice, it makes a wonderful side dish. I hope that you will enjoy it. Don't let the long list of ingredients deter you - it's worth it. You can always sub or omit if you don't like an ingredient. If you can't find lemongrass or lime leaves, sub with a piece of lemon and lime rind instead. It won't taste the same but it's better than omitting them. Please don't leave the cilantro out, it ties all the flavors together.

Ingredients For coconut rice for caron

  • 2 Tbsp
    peanut or vegetable oil
  • 1 sm
    sweet onion, diced
  • 3/4 c
    chicken stock or broth
  • 1/4 c
    unsweetened pineapple juice
  • 1 c
    coconut milk
  • 1/4 c
    cold water
  • 1/2 tsp
    sea salt
  • 1/4 tsp
    freshly ground black pepper
  • 1 tsp
    chili paste (with holy basil leaf)
  • 1 sm
    chili pepper
  • 1 clove
    garlic, coarsely crushed
  • 1/2"
    fresh ginger, peeled
  • 2
    fresh or dried lime leaves
  • 2 1/2"
    fresh lemongrass, coarsely chopped
  • 1 c
    jasmine rice, rinsed
  • GARNISHES
  • 1/2 c
    shredded unsweetened coconut, toasted
  • 1 lg
    green onion, finely sliced
  • 1/8 c
    golden raisins
  • 1/4 c
    fresh cilantro, finely chopped

How To Make coconut rice for caron

    Heat oil in a large pot over medium heat.

    Saute the onions for 5 minutes, then add the chicken stock, pineapple juice, coconut milk, and water, bringing the mixture to a hard boil.

    Add sea salt, black pepper, chili paste, chili pepper, garlic, ginger, lime leaves, lemongrass, and rice to the boiling liquid.

    Stir well and reduce heat to low. Cover and simmer for 20 minutes, or until all liquid has evaporated.

    Once the rice is cooked, take the rice off the heat. Remove the chili pepper, garlic clove, piece of ginger, lemongrass pieces and lime leaves.

    Fluff the rice with a fork; cover and let sit for 5 minutes.

    When ready to serve, garnish with the toasted coconut, sliced green onions, golden raisins and finely chopped cilantro.
