coconut rice for caron
This rice is the best; it is full of flavor. I created it using my favourite seasonings. When made with Jasmine rice, it makes a wonderful side dish. I hope that you will enjoy it. Don't let the long list of ingredients deter you - it's worth it. You can always sub or omit if you don't like an ingredient. If you can't find lemongrass or lime leaves, sub with a piece of lemon and lime rind instead. It won't taste the same but it's better than omitting them. Please don't leave the cilantro out, it ties all the flavors together.

Ingredients
- 2 tablespoons peanut or vegetable oil
- 1 small sweet onion, diced
- 3/4 cup chicken stock or broth
- 1/4 cup unsweetened pineapple juice
- 1 cup coconut milk
- 1/4 cup cold water
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon chili paste (with holy basil leaf)
- 1 small chili pepper
- 1 clove garlic, coarsely crushed
- 1/2" fresh ginger, peeled
- 2 fresh or dried lime leaves
- 2 1/2" fresh lemongrass, coarsely chopped
- 1 cup jasmine rice, rinsed
- GARNISHES
- 1/2 cup shredded unsweetened coconut, toasted
- 1 large green onion, finely sliced
- 1/8 cup golden raisins
- 1/4 cup fresh cilantro, finely chopped
How To Make coconut rice for caron

Step 1Heat oil in a large pot over medium heat.

Step 2Saute the onions for 5 minutes, then add the chicken stock, pineapple juice, coconut milk, and water, bringing the mixture to a hard boil.

Step 3Add sea salt, black pepper, chili paste, chili pepper, garlic, ginger, lime leaves, lemongrass, and rice to the boiling liquid.

Step 4Stir well and reduce heat to low. Cover and simmer for 20 minutes, or until all liquid has evaporated.

Step 5Once the rice is cooked, take the rice off the heat. Remove the chili pepper, garlic clove, piece of ginger, lemongrass pieces and lime leaves.

Step 6Fluff the rice with a fork; cover and let sit for 5 minutes.

Step 7When ready to serve, garnish with the toasted coconut, sliced green onions, golden raisins and finely chopped cilantro.
