    white rice
  • 1
    bell pepper, sliced
  • 1/4 c
    yellow onion chopped or sliced
  • 3
    small zucchini
  • 1
    large tomato, sliced thin
  • 1
    can chopped green chile's
  • 12 oz
    monterey jack cheese
  • 1 tsp
    garlic powder
  • 1 tsp
  • 1/2 tsp
  • 2 c
    sour cream

How to Make Chili Cheese Rice Bake


  1. Preheat oven to 350 degrees. Spray the bottom of a 9X13 inch glass baking dish. Cook rice according to package directions and pat into the bottom of the 9X13 inch glass baking dish.
  2. Steam zucchini, bell pepper and onions in a saute pan until just tender. Shred the Jack Cheese. Slice tomato thinly.
  3. Mix sour cream with garlic, salt and oregano.
  4. Cover the rice with green chilies, half of the jack cheese, spread steamed vegetables over the cheese then 2/3 of sliced tomato. Spread sour cream mixture over top of tomato, top with remaining tomato and remaining cheese. Bake at 350 degrees for 35 minutes
