chili cheese rice bake

This is a recipe my kid's loved and it is full of vege's.

Ingredients

  • 1 cup white rice
  • 1 - bell pepper, sliced
  • 1/4 cup yellow onion chopped or sliced
  • 3 - small zucchini
  • 1 - large tomato, sliced thin
  • 1 - can chopped green chile's
  • 12 ounces monterey jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon orregano
  • 1/2 teaspoon salt
  • 2 cups sour cream

How To Make chili cheese rice bake

  • Step 1
    Preheat oven to 350 degrees. Spray the bottom of a 9X13 inch glass baking dish. Cook rice according to package directions and pat into the bottom of the 9X13 inch glass baking dish.
  • Step 2
    Steam zucchini, bell pepper and onions in a saute pan until just tender. Shred the Jack Cheese. Slice tomato thinly.
  • Step 3
    Mix sour cream with garlic, salt and oregano.
  • Step 4
    Cover the rice with green chilies, half of the jack cheese, spread steamed vegetables over the cheese then 2/3 of sliced tomato. Spread sour cream mixture over top of tomato, top with remaining tomato and remaining cheese. Bake at 350 degrees for 35 minutes
