This is a recipe my kid's loved and it is full of vege's.

Ingredients For chili cheese rice bake

1 cwhite rice
-
1bell pepper, sliced
-
1/4 cyellow onion chopped or sliced

3small zucchini
-
1large tomato, sliced thin
-
1can chopped green chile's
-
12 ozmonterey jack cheese
-
1 tspgarlic powder
-
1 tsporregano
-
1/2 tspsalt
-
2 csour cream
How To Make chili cheese rice bake

1Preheat oven to 350 degrees. Spray the bottom of a 9X13 inch glass baking dish. Cook rice according to package directions and pat into the bottom of the 9X13 inch glass baking dish.

2Steam zucchini, bell pepper and onions in a saute pan until just tender. Shred the Jack Cheese. Slice tomato thinly.

3Mix sour cream with garlic, salt and oregano.

4Cover the rice with green chilies, half of the jack cheese, spread steamed vegetables over the cheese then 2/3 of sliced tomato. Spread sour cream mixture over top of tomato, top with remaining tomato and remaining cheese. Bake at 350 degrees for 35 minutes
