Ingredients
- 1 cup white rice
- 1 - bell pepper, sliced
- 1/4 cup yellow onion chopped or sliced
- 3 - small zucchini
- 1 - large tomato, sliced thin
- 1 - can chopped green chile's
- 12 ounces monterey jack cheese
- 1 teaspoon garlic powder
- 1 teaspoon orregano
- 1/2 teaspoon salt
- 2 cups sour cream
How To Make chili cheese rice bake

Step 1Preheat oven to 350 degrees. Spray the bottom of a 9X13 inch glass baking dish. Cook rice according to package directions and pat into the bottom of the 9X13 inch glass baking dish.

Step 2Steam zucchini, bell pepper and onions in a saute pan until just tender. Shred the Jack Cheese. Slice tomato thinly.

Step 3Mix sour cream with garlic, salt and oregano.

Step 4Cover the rice with green chilies, half of the jack cheese, spread steamed vegetables over the cheese then 2/3 of sliced tomato. Spread sour cream mixture over top of tomato, top with remaining tomato and remaining cheese. Bake at 350 degrees for 35 minutes
