My daughter hates broccoli. My daughter loves this cheesy broccoli rice. Chop the broccoli into whatever size pieces you want - super small bits or roughly chopped florets. Use whatever cheese you have on hand or to suit your taste. This is an excellent accompaniment to any protein and goes together in a snap!

Ingredients
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 large shallot, minced
- 1 cup rice, long grain
- 3 cups chicken or vegetable stock
- 2 cups broccoli, chopped
- 2 cups cheese, grated
- - salt and pepper to taste
How To Make cheesy broccoli rice

Step 1Melt butter in a saucepan over medium heat. Add garlic and shallot and saute until shallot is somewhat transparent - 5 minutes.

Step 2Stir in rice, broth and broccoli. Bring to a boil. Reduce heat to simmer, cover. Cook for 15-ish minutes or until rice is done.

Step 3Remove from heat and stir in cheese until melted. Add salt and pepper to taste. Enjoy!
