Ingredients
- 2 cups fresh mushrooms, sliced
- 3/4 cup onion, chopped
- 1/2 cup celery, chopped
- 1/3 cup green bell pepper, chopped
- 1 1/2 tablespoons butter, melted
- 1 pound pork sausage
- 1 cup long grain rice, uncooked
- 2 cups chicken broth
- 2 tablespoons fresh parsley, minced
How To Make charleston rice

Step 1Saute the first 4 ingredients in the melted butter in a large skillet until the vegetables are tender. Transfer the vegetable mixture to a large bowl; set aside.

Step 2Cook the sausage in a large heavy skillet over medium-high heat until browned, stirring to crumble the meat; drain well.

Step 3Add the sausage, rice, chicken broth, and parsley to the vegetable mixture; stir well. Transfer the rice mixture to a greased 11 x 7 x 1 1/2 inch baking dish. Cover and bake at 350 degrees for 30 minutes. Remove the cover, and stir gently. Cover and bake an additional 30 minutes or until the rice is tender and the liquid is absorbed.
