This recipe came from a bunch of recipes for camping. It has become an often used recipe in our kitchen. It can be used as a main dish or as a side dish.

Ingredients

  • 2 large onions, chopped
  • - fist size chunk of salt pork or bacon, chopped
  • 1 cup rice
  • 2 cups boiling water
  • 1/2 large can of tomatoes
  • 1 tablespoon sugar
  • 1 teaspoon celery seeds
  • 1/4 teaspoon black pepper
  • - grated cheese

How To Make camp rice

  • Step 1
    Cut up the onions and salt pork and brown them a little in a kettle.
  • Step 2
    Add 2 cups boiling water and a cup of rice. Don't stir. Cook until soft about 20 to 30 minutes. ---------------------OR----------------------------- Put the pork, onions, rice, and water into a rice cooker and cook until done.
  • Step 3
    Be heating a half large can of tomatoes, 1 tablespoon sugar, 1 teaspoon celery seed, and 1/2 teaspoon black pepper. Add this to the cooked rice and sprinkle on grated cheese.
