Ingredients

1 c
chopped onion
1/4 c
(1/2 stick) butter
4 c
cups cooked white rice
2 c
sour cream
1 c
cottage cheese
1
bay leaf
1/2 tsp
salt
1/8 tsp
pepper
3 small
cans green chiles, drained
2 c
sharp cheddar cheese, grated
chopped parsley

How to Make CALIFORNIA RICE

Step-by-Step

  • 1In a large skillet, saute onion in butter until golden. Remove from heat and stir in rice, sour cream, cottage cheese, bay leaf, salt and pepper. Lightly mix.
  • 2Layer half the rice mixture in a buttered 9x13-inch baking dish, then half the chiles, and sprinkle with 1 cup of the cheese. Repeat layers.
  • 3Bake in a preheated 375-degree oven for 30 minutes. Sprinkle with the chopped parsley and serve.
