calico rice
I made this up a while back. It is one of my favorite rice dishes. It goes well with any kind of meat. I have also stir fried chicken pieces in for a one bowl meal.

Ingredients
- 3 cups water
- 1 1/2 cups rice
- 1 medium onion, chopped
- 1 cup carrots, chopped
- 1 cup celery, sliced thin
- 2 tablespoons green pepper, sliced thin (more if you would like)
- 2 - green onions, sliced
- 2 - sprigs of fresh rosemary
- 1-2 teaspoon sage, fresh or ground
- 3-4 tablespoons olive oil (more if you need it)
- - salt & pepper to taste
How To Make calico rice

Step 1Cook rice according to package directions; set aside.

Step 2In a wok, combine all veggies and olive oil; cook till tender adding 1 sprig of fresh rosemary. Add rice to mixture. Add more olive oil, rosemary and sage. Season with salt & pepper. Toss till combined.

Step 3Serve with any kind of meat. I have stir fried chicken pieces in this as well. I have also made it with brown rice.
