Ingredients
- 1 teaspoon olive oil
- 1/2 - white onion, diced
- 1/2 - red pepper, diced
- 2 cloves minced garlic
- 1/2 - jalapeno, seeded and diced
- 1 cup brown minute rice
- 2 cups vegetable broth
- 1/2 teaspoon ground cumin
- 1/2 teaspoon curry powder
- 1/4 teaspoon cayenne pepper
- 1 can 15.5 oz black beans, rinsed and drained
How To Make black beans and brown rice

Step 1To the drained and rinsed black beans, add the cumin, curry and cayenne and set aside. In a 12 inch skillet, heat the oil. Add the onion, pepper, garlic and jalapeno and sauté for 4-5 minutes.

Step 2Add uncooked rice and sauté for 2 minutes. Add broth, bring to a boil, cover, and lower the heat. Cook for 20 minutes.

Step 3Add the black bean, spice mixture. Cook covered on low about 5 more minutes, until heated through.
