olive oil
white onion, diced
red pepper, diced
2 clove
minced garlic
jalapeno, seeded and diced
1 c
brown minute rice
2 c
vegetable broth
1/2 tsp
ground cumin
1/2 tsp
curry powder
1/4 tsp
cayenne pepper
1 can(s)
15.5 oz black beans, rinsed and drained

How to Make Black Beans and Brown Rice


  • 1To the drained and rinsed black beans, add the cumin, curry and cayenne and set aside. In a 12 inch skillet, heat the oil. Add the onion, pepper, garlic and jalapeno and sauté for 4-5 minutes.
  • 2Add uncooked rice and sauté for 2 minutes. Add broth, bring to a boil, cover, and lower the heat. Cook for 20 minutes.
  • 3Add the black bean, spice mixture. Cook covered on low about 5 more minutes, until heated through.
