Ingredients

  • 1 tsp
    olive oil
  • 1/2
    white onion, diced
  • 1/2
    red pepper, diced
  • 2 clove
    minced garlic
  • 1/2
    jalapeno, seeded and diced
  • 1 c
    brown minute rice
  • 2 c
    vegetable broth
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    curry powder
  • 1/4 tsp
    cayenne pepper
  • 1 can(s)
    15.5 oz black beans, rinsed and drained

How to Make Black Beans and Brown Rice

Step-by-Step

  1. To the drained and rinsed black beans, add the cumin, curry and cayenne and set aside. In a 12 inch skillet, heat the oil. Add the onion, pepper, garlic and jalapeno and sauté for 4-5 minutes.
  2. Add uncooked rice and sauté for 2 minutes. Add broth, bring to a boil, cover, and lower the heat. Cook for 20 minutes.
  3. Add the black bean, spice mixture. Cook covered on low about 5 more minutes, until heated through.
