black beans and brown rice

You would never know this was brown rice! Great flavor!

Ingredients

  • 1 teaspoon olive oil
  • 1/2 - white onion, diced
  • 1/2 - red pepper, diced
  • 2 cloves minced garlic
  • 1/2 - jalapeno, seeded and diced
  • 1 cup brown minute rice
  • 2 cups vegetable broth
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cayenne pepper
  • 1 can 15.5 oz black beans, rinsed and drained

How To Make black beans and brown rice

  • Step 1
    To the drained and rinsed black beans, add the cumin, curry and cayenne and set aside. In a 12 inch skillet, heat the oil. Add the onion, pepper, garlic and jalapeno and sauté for 4-5 minutes.
  • Step 2
    Add uncooked rice and sauté for 2 minutes. Add broth, bring to a boil, cover, and lower the heat. Cook for 20 minutes.
  • Step 3
    Add the black bean, spice mixture. Cook covered on low about 5 more minutes, until heated through.
