basmati rice with pine nuts
When I first discovered Basmati rice years ago, I thought, "This is lovely, but what can I do to dress it up?" I knew I wanted something crunchy, so I looked in the pantry and saw the pine nuts (pinolas) that I often use in salads. I added them to the rice and it was "Love at First Bite!"

Ingredients
- 1 package basmati indian-style rice
- 2 tablespoons butter
- 1/3 cup pine nuts
- - salt to taste
How To Make basmati rice with pine nuts

Step 1I used Tasty Bite Basmati Rice, which is fully cooked, but you can use other brands. This brand only has 2 servings.

Step 2Cook rice according to package instructions. Keep warm.

Step 3In a medium skillet, brown the pine nuts in melted butter over low heat until nicely browned. Remove from heat and drain very briefly on paper towels.

Step 4Add browned pine nuts to rice, along with salt. Stir to mix. Serve with meat or fish.

Step 5You may add 1/4 tsp. garlic powder, or 2 Tbsp. chopped, cooked onion if you like, but I prefer it without so as to savor the wonderful flavor of the rice.
