Ingredients
- 1 tablespoon olive oil
- 1/2 large onion, chopped fine
- 1 pound ground pork
- 4 tablespoons tomato paste
- 1/2 cup chicken broth
- 1 cup long grain rice
- 3 - eggs
- 1 cup whole milk
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups parmesan cheese, grated
- 1 cup chicken broth
- 1/2 cup additional parmesan cheese for top, optional
How To Make baked rice maltese style

Step 1In a large skillet, heat oil and add onion. Cook until soft and translucent. Add pork and cook until meat is browned and cooked through. Add tomato paste, 1/2 cup broth, curry powder, salt and pepper. Mix well.

Step 2Whisk eggs in a medium bowl and add 1 1/2 cups parmesan cheese and milk - mix well.

Step 3In an large deep casserole dish, place rinsed and drained rice. Cover with meat sauce mixture and stir to combine. Add egg mixture and stir to combine thoroughly. Add 1 cup chicken broth and mix well.

Step 4Preheat oven to 325 and bake casserole for 30 minutes. Stir mixture to evenly distribute. Sprinkle 1/2 cup of parmesan over the top, if desired, and continue baking 30 minutes or until rice is set and golden brown.
