artichoke salad

I have been making this salad for over 30 years and I still get great comments from anyone who is tasting it for the first time, We make it for all family pot lucks and If I don't make it at Thanksgiving my kids say they are not coming home. Everyone in the family now make it aunts, cousins, their friends, I think you have to follow the recipe to the tee for it to be the best, a few have tried to alter it but its not the same. Oh and by the way I have to 4 times the recipe for our gatherings. Enjoy

Ingredients

  • 1 box rice a roni chicken flavor
  • 2 small artichokes marinated
  • 3 - green onion
  • 1/2 - green bell pepper
  • 12 - green olives
  • 1/2 cup mayonnaise
  • 1/2 teaspoon curry powder
  • 2 tablespoons artichoke marinated juice

How To Make artichoke salad

  • Step 1
    Make rice a roni to box directions
  • Step 2
    While the rice is cooking, chop up green onion with their tops, peppers and artichokes. Cut green olives in half.
  • Step 3
    Cool the rice, in the winter I take it out side and stir till cool, in summer I place it in the frig. and stir off and on till cool.
  • Step 4
    After its cool you add all ingredients and mix well, keep in frig. until ready to eat. Enjoy
