Ingredients

  • 2 tablespoons unsalted butter
  • 1/4 cup finely chopped yellow onion
  • 1/3 cup slivered almonds
  • 1 cup long grain white rice, uncooked
  • 2 cups chicken broth
  • 1/4 cup lime juice
  • 2 tablespoons soy sauce
  • - ground black pepper, to taste
  • 2 teaspoons grated lime zest
  • - fesh chopped parsely, for garnish

How To Make almond lime rice pilaf

  • Step 1
    n a medium saucepan, melt the butter over medium-high heat. Stir in the onion and almonds. Cook for 5 to 7 minutes or until the onion is softened and the almonds are golden, stirring occasionally.
  • Step 2
    Add the rice; cook and stir for 1 minute.
  • Step 3
    Slowly stir in the broth, lime juice, soy sauce and pepper. Bring to a boil.
  • Step 4
    Cover, reduce heat to low, simmer for 15 to 20 minutes or until liquid is absorbed.
  • Step 5
    Stir in lime zest, fluff with a fork and garnish with parsley. Serve.
