unsalted butter
1/4 c
finely chopped yellow onion
1/3 c
slivered almonds
1 c
long grain white rice, uncooked
2 c
chicken broth
1/4 c
lime juice
2 Tbsp
soy sauce
ground black pepper, to taste
2 tsp
grated lime zest
fesh chopped parsely, for garnish

How to Make Almond Lime Rice Pilaf


  • 1n a medium saucepan, melt the butter over medium-high heat. Stir in the onion and almonds. Cook for 5 to 7 minutes or until the onion is softened and the almonds are golden, stirring occasionally.
  • 2Add the rice; cook and stir for 1 minute.
  • 3Slowly stir in the broth, lime juice, soy sauce and pepper. Bring to a boil.
  • 4Cover, reduce heat to low, simmer for 15 to 20 minutes or until liquid is absorbed.
  • 5Stir in lime zest, fluff with a fork and garnish with parsley. Serve.
