Ingredients

  • 4 medium yams, peeled and sliced
  • 1/2 teaspoon orange peel, finely shredded
  • 1/2 cup orange juice
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon allspice

How To Make yams for health

  • Step 1
    In a large skillet, bring 1\" of water to a boil; add yams.
  • Step 2
    Cover and simmer for 20 minutes or until they are tender.
  • Step 3
    Drain.
  • Step 4
    In a small bowl, mix orange peel, orange juice, brown sugar, salt, cinnamon and allspice.
  • Step 5
    Pour over yams in skillet.
  • Step 6
    Cook and stir until bubbly.
  • Step 7
    Simmer, uncovered, for 5 minutes, spooning sauce over potatoes occasionally to make a glaze.
