Onion Cake is a traditional side dish in Wales. There are many different versions of this dish, with all sorts of family recipes that use specific varieties of potatoes and herb combinations. Some add a little lamb to help soften and flavor the potatoes, while some prefer adding cheese (as in this recipe). The variety of potato used for this recipe can effect baking time; floury potatoes will usually bake within an hour, but waxy potatoes often take longer to bake. It's best to use Caerphilly cheese if possible. But cheddar can be used if need be, as it's similar in taste and texture.

Ingredients

  • about 1 tablespoon vegetable oil (to grease baking dish)
  • 2 pounds potatoes, peeled and thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup - grated caerphilly cheese (you can use cheddar if you can't find caerphilly)
  • 1 medium onion, peeled and finely chopped
  • 1/2 cup - butter, cut into thin pats
  • 1 to 2 tablespoons fresh chives, chopped

How To Make welsh onion cake (teisen nionod)

  • Step 1
    Preheat oven to 350°F (180°C). Grease bottom and sides of a baking dish with the vegetable oil.
  • Step 2
    Place half of the potato slices in the baking dish, and season them with salt and pepper. Sprinkle the grated cheese over the potato layer. Layer the onions over the cheese, and dot onions with bits of butter. Add another layer of seasoned potatoes and dot with butter (use more butter for this, if needed). Distribute the snipped fresh chives on top.
  • Step 3
    Cover the baking dish, and bake for 50 minutes. Remove cover and bake an additional 20 to 40 minutes.
