Ingredients
- 1 pound small red potatoes, peeled and sliced
- 1 pound long white potatoes, peeled and sliced
- 1/3 cup mayonnaise
- 1/3 cup vegetable oil
- 2 tablespoons white wine vinegar
- 1/2 cup finely chopped red onion
- 2 - carrots, thinly sliced
- 1 pint cherry tomatoes, quartered
- 1 small can ripe olives, sliced
- 1/2 cup bacon, cooked and crumbled

Step 1Boil potatoes until tender. Whisk mayonnaise oil and vinegar until smooth. Stir in onion. Slice and add potatoes and remaining ingredients. Stir gently. Makes 8 servings.
