Ingredients

1 lb
small red potatoes, peeled and sliced
1 lb
long white potatoes, peeled and sliced
1/3 c
mayonnaise
1/3 c
vegetable oil
2 Tbsp
white wine vinegar
1/2 c
finely chopped red onion
2
carrots, thinly sliced
1 pt
cherry tomatoes, quartered
1 small
can ripe olives, sliced
1/2 c
bacon, cooked and crumbled

Step-By-Step

1Boil potatoes until tender. Whisk mayonnaise oil and vinegar until smooth. Stir in onion. Slice and add potatoes and remaining ingredients. Stir gently. Makes 8 servings.
