Ingredients
- FOR THE POTATO VOLCANO
- 6 medium potatoes cooked
- 1 cup evaporated milk or more if needed
- 1 teaspoon salt
- 1/8 teaspoon pepper
- FOR THE VOLCANO TOPPING
- 2 - egg yolks beaten
- 1/4 cup evaporated milk
- 2 tablespoons butter, melted
- 1/2 cup grated american cheese or more to taste
How To Make volcano potatoes

Step 1Peel cooked potatoes and mash in the hot drained pan they were boiled in. Mash thoroughly and then beat fluffy adding milk for your favorite desired consistency. Season with salt and pepper.

Step 2Heap mixture in center of a greased pie plate or baking dish. Make a crater in the center the size of a custard cup.

Step 3Mix yolks, milk, butter, cheese, salt and pepper to taste. Pour into the crater. Bake in a very hot oven (450°F) until the topping browns, cracks and runs down the side of the potato volcano, about 15 minutes.
