twice baked cheesy potato casserole
To speed up this delicious potato dish. I microwave my potatoes. This is one delicious dish. You could add other favorites to it with no problem. This recipe could easily be halved also. It makes a deep dish full. Enjoy!

Ingredients
- 12 - unpeeled potatoes, baked ( medium )
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 pounds bacon, cooked and crumbled
- 3 cups mozzarella cheese, shredded
- 3 cups cheddar cheese, shredded
- 4 cups sour cream
- - diced green onions, optional
How To Make twice baked cheesy potato casserole

Step 1Preheat oven to 350 degrees F.; grease the bottom and sides of a deep 9 x 13 baking dish.

Step 2Cut baked potatoes into 1 inch cubes. Spread half of the cubed potatoes in the bottom of the prepared baking dish.

Step 3Sprinkle the potatoes with half of the salt, pepper, onions if using and bacon.

Step 4Add half of the sour cream on top and carefully spread out evenly. Sprinkle half of the cheeses over the sour cream.

Step 5Repeat all of the layers. As you notice, this is a very full casserole. Make sure you use a deep casserole dish.

Step 6Place in the preheated oven and bake, uncovered, for 30 to 45 minutes or until the cheese is melted and nicely browned.
