I hadn't thought of these in years until recently when I overheard some ladies at a pitch-in mention them. Oh, what yummy memories! My mother was the Potato Queen. I am attempting to make them as she did. The added eggs were her little secret. 07-20-2017

Ingredients
- 3 pounds potatoes, peeled and halved
- 1 large yellow onion, chopped or sliced
- 1/3 cup extra virgin olive oil
- - salt and pepper to taste
- 2 large eggs
How To Make thelma's homefries "plus"

Step 1Bring large pot of water to a boil and add potatoes. Cover and cook until almost done, about 10-12 minutes.

Step 2Take potatoes off the heat and immerse them in cold water until cool enough to handle.

Step 3Slice potatoes and lay them on paper towels to drain thoroughly.

Step 4Place oil in a large skillet over medium heat and add onions. When onions begin to appear translucent, add the potato slices.

Step 5Cook over high heat, turning frequently to prevent burning. When they reach desired brownness, break two eggs into the mixture.

Step 6Stir eggs into potatoes and onions, reducing heat, until eggs are cooked. Salt and pepper to taste.

Step 7My mother often served these with sauerkraut on the side. Yummy goodness!
