I hadn't thought of these in years until recently when I overheard some ladies at a pitch-in mention them. Oh, what yummy memories! My mother was the Potato Queen. I am attempting to make them as she did. The added eggs were her little secret. 07-20-2017

Ingredients

  • 3 pounds potatoes, peeled and halved
  • 1 large yellow onion, chopped or sliced
  • 1/3 cup extra virgin olive oil
  • - salt and pepper to taste
  • 2 large eggs

How To Make thelma's homefries "plus"

  • Step 1
    Bring large pot of water to a boil and add potatoes. Cover and cook until almost done, about 10-12 minutes.
  • Step 2
    Take potatoes off the heat and immerse them in cold water until cool enough to handle.
  • Cooked potatoes draining on paper towels
    Step 3
    Slice potatoes and lay them on paper towels to drain thoroughly.
  • Chopped onions cooking in olive oil
    Step 4
    Place oil in a large skillet over medium heat and add onions. When onions begin to appear translucent, add the potato slices.
  • Break two eggs into potato/onion mixture
    Step 5
    Cook over high heat, turning frequently to prevent burning. When they reach desired brownness, break two eggs into the mixture.

    Stir eggs into potatoes and onions, reducing heat, until eggs are cooked. Salt and pepper to taste.
