tatoes & peas with mint

This was the last dish I made with all the PEAS I bought. LOL Yes I kind of went over board in buying peas. But we had lots of yummy veggie healthy meals. This was a hit with Uncel.I plan to make this dish again but am onna buy a lot less peas next time LOL.

Ingredients

  • 1 pound red potatoes, small & halved
  • dash salt & pepper
  • 1 cup peas, shelled
  • 1/2 pound snap & snow peas, sliced crosswise
  • 2 tablespoons butter, unsalted & room temperature
  • 1/2 teaspoon lemon zest, grated
  • 2 teaspoons lemon juice, fresh
  • 2 tablespoons mint, fresh & chopped

How To Make tatoes & peas with mint

  • Step 1
    1st in a medium pot over medium-high heat boil the potatoes in salted water for about 12 mins. Than add in the peas & cook until a bright green color & crisp about 2 mins.
  • Step 2
    Than drain off the water. Transfer to large bowl & toss with the butter, lemon zest, jucie & mint. Season with the salt & pepper.
  • Step 3
    Best served warm as a side dish.
