We all like salt & vinegar chips… these are salt & vinegar fingerling taters. And if you want to use regular taters, just cut them into quarters. They are easy to make with a minimum of ingredients, and oh so yummy. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 pound fingerling potatoes, cut in half, lengthwise
  • 5 cups water
  • 1 cup white vinegar
  • 2 teaspoons salt, kosher variety
  • 2 tablespoons grapeseed oil

How To Make tater essentials: salt & vinegar fingerling taters

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Add the water, vinegar, and salt, to a pot over medium-high heat.
  • Step 4
    While the water is coming to the boil, cut the taters in half, lengthwise.
  • Step 5
    Add the taters to the pot and reduce to a simmer.
  • Step 6
    Continue to simmer, until the potatoes are cooked, about 12 – 15 minutes.
  • Step 7
    Chef’s Tip: If you insert a paring knife into the taters and it goes in without resistance, then they are cooked.
  • Step 8
    Remove from the pan, and allow them to rest for about 10 minutes.
  • Step 9
    Place them into a bowl, and toss with the grapeseed oil.
  • Step 10
    Use your hand, or the bottom of a large spatula, to smash the taters.

    Chef’s Note: Do not flatten, just crush down a bit.

    Place the taters into the air fryer.
  • Step 13
    Set the temp to 380f (195c), and cook until crispy, about 18 – 22 minutes.

    PLATE/PRESENT
  • Step 15
    Toss the taters with 1 or 2 tablespoons of additional vinegar, sprinkle with a bit more salt, and serve while nice and warm. Enjoy.
