This is more delicious than you think! The avocado is not necessary unless you like delicious food!

Ingredients

  • 2-3 pounds red potatoes, cubed
  • 1/2 medium red onion, chopped
  • 1 - bunch fresh dill, minced
  • 1 tablespoon dijon mustard
  • 1/4 cup dill pickle relish
  • 1/3 cup tahini
  • 1 teaspoon lemon juice
  • 1 - avocado
  • - salt and pepper to taste

How To Make tahini potato salad with avocado

  • Step 1
    Boil the potatoes until they are tender - about 20 minutes. Don't let them get mushy!
  • Step 2
    Combine all other ingredients (except avocado) in a bowl. Add drained potatoes and gently toss. Adjust salt and pepper. Set in the fridge for awhile to cool down. This can be served warm if you can't wait!
  • Step 3
    Served topped with sliced or chopped avocado (be sure to add a little salt to the avocado too).
