Ingredients

2-3 lb
red potatoes, cubed
1/2 medium
red onion, chopped
1
bunch fresh dill, minced
1 Tbsp
dijon mustard
1/4 c
dill pickle relish
1/3 c
tahini
1 tsp
lemon juice
1
avocado
salt and pepper to taste

How to Make Tahini Potato Salad with Avocado

Step-by-Step

  • 1Boil the potatoes until they are tender - about 20 minutes. Don't let them get mushy!
  • 2Combine all other ingredients (except avocado) in a bowl. Add drained potatoes and gently toss. Adjust salt and pepper. Set in the fridge for awhile to cool down. This can be served warm if you can't wait!
  • 3Served topped with sliced or chopped avocado (be sure to add a little salt to the avocado too).
