Made with both sweet and white potatoes, this dish is a blend of color, taste, and texture. It's creamy, but not too heavy, and sweeter and less starchy than it would be with all white potatoes. I'm an ole gal ; ) ~~ so I use a food processor to slice my potatoes to be thinly sliced. And if I use the Red potato in place of the White. I wash em up and leave skins on and then slice thinly.
