sweet & white potatoes au gratin
Made with both sweet and white potatoes,this dish is a blend of color,taste,and texture. It's creamy,but not too heavy,and sweeter and less starchy than it would be with all white potatoes. I'm an ole gal ; ) ~~ so I use a food processor to slice my potatoes to be thinly sliced. And if I use the Red potato in place of the White. I wash em up and leave skins on and then slice thinly.

Ingredients
- 1 pound sweet potatoes,washed thinly sliced
- 1 pound white potatoes,washed thinly sliced
- 1 tablespoon olive oil
- 1 cup red onion,thinly sliced
- 2 cloves garlic,minced
- 1/2 cup red bell peppers,thinly sliced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon all-purpose flour
- 1/2 cup whole milk or (your choice of the milk your family is drinking)
- 2 large eggs
- 1 cup yogurt, low-fat, plain (again your choice of the plain yogurt your family is eating)
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup parmesan cheese,shredded,(divided)
- 1/2 cup sharp cheddar cheese,shredded,(divided)
How To Make sweet & white potatoes au gratin

Step 1Wash and thinly slice potatoes. In a microwave-safe dish (not plastic),sprinkle potato slices with 1/4 cup water,cover with lid or waxed paper,and microwave on high for 3 to 4 minutes.

Step 2Remove cover from bowl and allow potatoes to cool.

Step 3In a saute' pan,heat olive oil over medium-high heat and add onions,garlic,red pepper. cook until slightly brown,about 5 minutes. Add thyme and flour,then whisk in milk. The flour will cause mixture to thicken. Remove from heat and allow to cool.

Step 4In a 9"X13" baking dish,layer the potato slices like roof shingles until the pan is filled.

Step 5Gently fold eggs,yogurt,salt,pepper,1/4 cup of the Parmesan cheese,and 1/4 cup Sharp Cheddar cheese into the now cooled onion mixture,combining well,and then pour over layered potatoes.

Step 6Top with remaining 1/4 cup Parmesan cheese and 1/4 cup Sharp Cheddar cheese.

Step 7Bake in preheated 375F. oven for 45 minutes.
