Ingredients

  • 4 pounds sweet potatoes
  • 1 teaspoon salt, divided
  • 1 cup real. organic maple syrup
  • 1-1/2 cup whole cranberries
  • 3 tablespoons butter

How To Make sweet potatoes w/ maple-cranberry sauce

  • Step 1
    In lg pot of water, add 1/2 tsp salt and potatoes. Bring to a boil. Reduec heat to low, simmer, covered 30 mins, or until tender. Drain well..
  • Step 2
    In saucepan, bring syrup to a boil, reduce heat to medium. Boil gently until reduced by 1/2. Stir in cranberries, butter and 12 tsp salt. Cook until cranberries "pop."
  • Step 3
    Heat oven to 400. Cut potatoes crosswise into 1"-pieces. Place in a 3-quart casserole dish. Spoon maple syrup mix over potatoes. Bake uncovered 20 mins.
