sweet potato salad
This is a very quick and simple potato salad to make for any special occasion. My son and I loved this potato salad, and I plan to make this again real soon in the future...A nice variation to the palate...I found this recipe in a cookbook called, "Potatoes" as well...

Ingredients
- 2 1/4 cups sweet potatoes, diced
- 4 tablespoons butter
- 1 tablespoon lemon juice
- 1 - garlic clove
- 1 - red bell pepper, seeded and diced
- 1 - green bell pepper, seeded and diced
- 2 - underripe bananas, thickly sliced,
- 2 - thick slices of white bread, crusts removed, diced..or croutons
- - salt and pepper, to taste
- DRESSING
- 2 tablespoons honey
- 2 tablespoons chopped chives
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
How To Make sweet potato salad

Step 1Boil the sweet potatoes for 10-15 minutes, until tender. Drain thoroughly and reserve.

Step 2Meanwhile, melt the butter in a skillet and add the lemon juice, garlic, and bell peppers. Cook for around 3 minutes stirring constantly.

Step 3Add the banana slices to the pan and cook for a minute. Remove the bananas from the pan with a slotted spoon and stir into the potatoes.

Step 4Add the bread cubes to the skillet and cook, stirring for around 2 minutes, or until golden brown on all sides.

Step 5Mix the dressing ingredients together in a small pan and heat until it is runny.

Step 6Spoon the potato mixture into a serving dish, season to taste, and pour the dressing over the mixture along with the croutons. Serve immediately.
