Ingredients
- 1-1/2 pound sweet potatoes, peeled, shredded
- 1 small onion, finely chopped
- 1 large egg, beaten
- 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- - canola oil, for frying
- 1/2 cup real maple syrup
How To Make sweet potato pancakes w/ maple syrup

Step 1In lg bowl, combine all ingredients, except for oil and syrup. Mix well.

Step 2Form dough into 8 equal-sized pancakes. In lg deep skillet, heat about 1/4 cup oil over med-high heat.

Step 3Place 1/2 of the pancakes in skillet. Fry about 3 mins each side, or until golden. Repeat w/ other pancakes, drain on paper towels. Serve w/ warm maple syrup.
