Sweet Potato Bake with Granola Graham Topping
This came out better than anticipated.
3baked or microwaved sweet potatoes
1/2 -stick butter - melted (4 oz)
2eggs - beaten
2 Tbspagava nectar (dark) - if you don't use agava, brown sugar would work.
1/2 - tspcinnamon
1/4 - tspnutmeg
1/4 - tspwhite pepper
Dashginger and salt
1 cgranola cereal
1graham cracker - crushed
2 tspbutter - melted
Dashcinnamon and nutmeg
OPTIONS: IF YOU HAVE THEM, ADD PECANS OR WALNUTS TO THE TOPPING MIXTURE.
How to Make Sweet Potato Bake with Granola Graham Topping
- Preheat Oven to 375 degrees.
In large bowl beat eggs - add:
- scooped out baked sw. potatoes, and discard skins.
- Agava Nectar
- add spices
- Beat with mixer well, till smooth and fluffy.
Pour into a 1- 1/2 quart buttered casserole dish.
In small bowl: Mix all ingredients together.
Spread on top casserole.
Bake on middle rack at 375 deg. for about 25 minutes, till puffy and topping is lightly browned.
Let sit a few minutes before serving.
