sweet potato bake with granola graham topping

Whipped this up with what I had in the pantry to use up Three sweet potatoes. This came out better than anticipated.

Ingredients

  • 3 - baked or microwaved sweet potatoes
  • 1/2 - - stick butter - melted (4 oz)
  • 2 - eggs - beaten
  • 2 tablespoons agava nectar (dark) - if you don't use agava, brown sugar would work.
  • 1/2 - teaspoon cinnamon
  • 1/4 - teaspoon nutmeg
  • 1/4 - teaspoon white pepper
  • Dash - ginger and salt
  • TOPPING
  • 1 cup granola cereal
  • 1 - graham cracker - crushed
  • 2 teaspoons butter - melted
  • Dash - cinnamon and nutmeg
  • OPTIONS: IF YOU HAVE THEM, ADD PECANS OR WALNUTS TO THE TOPPING MIXTURE.

How To Make sweet potato bake with granola graham topping

  • Step 1
    Preheat Oven to 375 degrees. In large bowl beat eggs - add: - scooped out baked sw. potatoes, and discard skins. - Agava Nectar - add spices
  • Step 2
    Beat with mixer well, till smooth and fluffy. Pour into a 1- 1/2 quart buttered casserole dish. set aside.
  • Step 3
    TOPPING: In small bowl: Mix all ingredients together. Spread on top casserole. Bake on middle rack at 375 deg. for about 25 minutes, till puffy and topping is lightly browned. Let sit a few minutes before serving.
