sweet potato and applesauce bake

I wanted to make a luscious sweet potato dish without all the fat, and this delicious little critter is what I came up with, it smells like the holidays in here, even though it's 100° outside!

Ingredients

  • 3 medium sweet potatoes (5-6 cups sliced)
  • 1 1/2 cups plain applesauce
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4-1/2 cup finely chopped walnuts
  • - salt and pepper to taste

How To Make sweet potato and applesauce bake

  • Step 1
    Generously spray a pie plate or spring form pan with non stick spray oil, sides and bottom.
  • Step 2
    Peel and slice sweet potatoes into rounds.
  • Step 3
    In a large bowl mixed together 1 1/2 c. of plain applesauce, 1/4 c. brown sugar, 1 tsp. cinnamon, and 1/4 tsp. nutmeg.
  • Step 4
    Pour sliced potatoes into bowl and make sure each potato is coated on both sides with applesauce mixture. Layer in pan and pour any leftover sauce on top and spread out. Top with walnuts.
  • Step 5
    Bake 375° for 1-1.5 hrs. or until fork can be easily inserted. NOTE: I placed my pan on a baking sheet to prevent spills in the oven, that can increase baking time.
