This vegetarian string/green beans and potato dish is simple, yet very flavorful. The sweltering heat has hit Dubai and nothing sounds better than a light home cooked curry accompanying flat bread or steamed rice.

Ingredients

  • 500 grams fresh string/green beans,topped - tailed and finely chopped
  • 2 medium potatoes, russets diced finely
  • 1 teaspoon ginger, finely slivered
  • 2 medium chilies green, fresh deseeded and finely chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric, ground
  • 1 teaspoon salt
  • 2 tablespoons grape seed/ or canola oil
  • 1 teaspoon garlic, minced
  • 100 milliliters warm water
  • 2 tablespoons lemon juice, fresh

How To Make string/green beans with melt in u mouth potato

  • Step 1
    heat oil in non stick heavy frying pan with a lid.
  • Step 2
    add whole cumin seeds,chopped green chilies and lower heat to medium.
  • Step 3
    add chopped string/green beans,finely diced potatoes, turmeric powder and 100 ml. warm water.
  • Step 4
    allow to cook, stirring covered on medium heat,until they are tender.
  • Step 5
    season with salt and lemon juice.
  • Step 6
    serve with flat bread/steamed rice or serve as a snack topped with toasted sesame seeds or crushed peanuts.
