String/Green Beans with Melt In U Mouth Potato

This vegetarian string/green beans and potato dish is simple, yet very flavorful. The sweltering heat has hit Dubai and nothing sounds better than a light home cooked curry accompanying flat bread or steamed rice.

500 g
fresh string/green beans,topped - tailed and finely chopped
2 medium
potatoes, russets diced finely
1 tsp
ginger, finely slivered
2 medium
chilies green, fresh deseeded and finely chopped
1 tsp
cumin seeds
1/2 tsp
turmeric, ground
1 tsp
2 Tbsp
grape seed/ or canola oil
1 tsp
garlic, minced
100 ml
warm water
2 Tbsp
lemon juice, fresh


1heat oil in non stick heavy frying pan with a lid.
2add whole cumin seeds,chopped green chilies and lower heat to medium.
3add chopped string/green beans,finely diced potatoes, turmeric powder and 100 ml. warm water.
4allow to cook, stirring covered on medium heat,until they are tender.
5season with salt and lemon juice.
6serve with flat bread/steamed rice or serve as a snack topped with toasted sesame seeds or crushed peanuts.
