This vegetarian string/green beans and potato dish is simple, yet very flavorful. The sweltering heat has hit Dubai and nothing sounds better than a light home cooked curry accompanying flat bread or steamed rice.

500 g
fresh string/green beans,topped - tailed and finely chopped
2 medium
potatoes, russets diced finely
1 tsp
ginger, finely slivered
2 medium
chilies green, fresh deseeded and finely chopped
1 tsp
cumin seeds
1/2 tsp
turmeric, ground
1 tsp
2 Tbsp
grape seed/ or canola oil
1 tsp
garlic, minced
100 ml
warm water
2 Tbsp
lemon juice, fresh

How to Make String/Green Beans with Melt In U Mouth Potato


  • 1heat oil in non stick heavy frying pan with a lid.
  • 2add whole cumin seeds,chopped green chilies and lower heat to medium.
  • 3add chopped string/green beans,finely diced potatoes, turmeric powder and 100 ml. warm water.
  • 4allow to cook, stirring covered on medium heat,until they are tender.
  • 5season with salt and lemon juice.
  • 6serve with flat bread/steamed rice or serve as a snack topped with toasted sesame seeds or crushed peanuts.
