String/Green Beans with Melt In U Mouth Potato
500 gfresh string/green beans,topped - tailed and finely chopped
2 mediumpotatoes, russets diced finely
1 tspginger, finely slivered
2 mediumchilies green, fresh deseeded and finely chopped
1 tspcumin seeds
1/2 tspturmeric, ground
2 Tbspgrape seed/ or canola oil
1 tspgarlic, minced
100 mlwarm water
2 Tbsplemon juice, fresh
How to Make String/Green Beans with Melt In U Mouth Potato
- heat oil in non stick heavy frying pan with a lid.
- add whole cumin seeds,chopped green chilies and lower heat to medium.
- add chopped string/green beans,finely diced potatoes, turmeric powder and 100 ml. warm water.
- allow to cook, stirring covered on medium heat,until they are tender.
- season with salt and lemon juice.
- serve with flat bread/steamed rice or serve as a snack topped with toasted sesame seeds or crushed peanuts.
