Sour Cream Potatoes

Don't let my picture deceive you, these potatoes are excellent. It can also be made low fat by using a light or non-fat sour cream.

  • 2
    medium russet potatoes
  • 1/2 c
    sour cream
  • 2 Tbsp
  • 1/4 c
    chopped fresh chives
  • ·
    juice of 1/2 a lemon
  • ·
    salt and pepper, to taste
  • ·
    olive oil, for brushing

How to Make Sour Cream Potatoes


  1. Preheat oven to 400.
  2. Pierce the potatoes and brush with olive oil.
  3. Bake directly on the oven rack until tender, about an hour. Cool slightly, then cut into chunks.
  4. Mix sour cream, buttermilk, chives and lemon juice in a large bowl and season with salt and pepper.
  5. Stir in potatoes. Serve warm or room temp.
