Don't let my picture deceive you, these potatoes are excellent. It can also be made low fat by using a light or non-fat sour cream.

Ingredients
- 2 - medium russet potatoes
- 1/2 cup sour cream
- 2 tablespoons buttermilk
- 1/4 cup chopped fresh chives
- - juice of 1/2 a lemon
- - salt and pepper, to taste
- - olive oil, for brushing
How To Make sour cream potatoes

Step 1Preheat oven to 400.

Step 2Pierce the potatoes and brush with olive oil.

Step 3Bake directly on the oven rack until tender, about an hour. Cool slightly, then cut into chunks.

Step 4Mix sour cream, buttermilk, chives and lemon juice in a large bowl and season with salt and pepper.

Step 5Stir in potatoes. Serve warm or room temp.
