Don't let my picture deceive you, these potatoes are excellent. It can also be made low fat by using a light or non-fat sour cream.

Ingredients

2
medium russet potatoes
1/2 c
sour cream
2 Tbsp
buttermilk
1/4 c
chopped fresh chives
juice of 1/2 a lemon
salt and pepper, to taste
olive oil, for brushing

How to Make Sour Cream Potatoes

Step-by-Step

  • 1Preheat oven to 400.
  • 2Pierce the potatoes and brush with olive oil.
  • 3Bake directly on the oven rack until tender, about an hour. Cool slightly, then cut into chunks.
  • 4Mix sour cream, buttermilk, chives and lemon juice in a large bowl and season with salt and pepper.
  • 5Stir in potatoes. Serve warm or room temp.
