sour cream potatoes

Don't let my picture deceive you, these potatoes are excellent. It can also be made low fat by using a light or non-fat sour cream.

Ingredients

  • 2 - medium russet potatoes
  • 1/2 cup sour cream
  • 2 tablespoons buttermilk
  • 1/4 cup chopped fresh chives
  • - juice of 1/2 a lemon
  • - salt and pepper, to taste
  • - olive oil, for brushing

How To Make sour cream potatoes

  • Step 1
    Preheat oven to 400.
  • Step 2
    Pierce the potatoes and brush with olive oil.
  • Step 3
    Bake directly on the oven rack until tender, about an hour. Cool slightly, then cut into chunks.
  • Step 4
    Mix sour cream, buttermilk, chives and lemon juice in a large bowl and season with salt and pepper.
  • Step 5
    Stir in potatoes. Serve warm or room temp.
