This is an easy side dish to construct, and they come out of the oven with a wonderful hint of vinegar and dill. The only potato that I have tried with this recipe are the small golden variety; however, you might try other varieties and see what happens. After trying several different garnishes, I believe that simple is best. So, some freshly-grated Parmesan cheese; plus, a sprinkle of sea salt, and freshly ground black pepper are all that they require. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 pound small golden potatoes, quartered
  • 1 cup white vinegar
  • 1 cup filtered water
  • 1 tablespoon salt, kosher variety
  • 1 tablespoon dill seed
  • 1 tablespoon olive oil, extra virgin variety
  • 1 teaspoon sesame oil
  • OPTIONAL ITEMS
  • - parmesan cheese, freshly grated, for garnish
  • - sea salt, for seasoning
  • - black pepper, freshly ground, for seasoning

How To Make side essentials: dill-flavored golden potatoes

    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Place the quartered potatoes into a large mixing bowl.
  • Step 4
    Add the water, vinegar salt, and dill seed to a saucepan, and bring to a boil. Or, you could put it into a heatproof measuring cup, and nuke it on high for 2 – 3 minutes.
  • Step 5
    Pour the boiling liquid over the taters.
  • Step 6
    Let them sit for 60 to 90 minutes.
  • Step 7
    Drain and discard the liquid, but do not rinse.
  • Step 8
    Chef’s Note: Some of the dill seeds will still be clinging to the taters… No worries.
  • Step 9
    Return the taters to the bowl, and toss with the olive sesame oil, and a pinch or two of salt and pepper.
  • Step 10
    Add them to the basket of your air fryer, or place them on a parchment-lined baking sheet.
  • Step 11
    Set the air fryer to 400f (205c), and bake for 18 – 22 minutes, or until nicely browned.
  • Step 12
    Chef’s Note: If you are using a conventional oven, set the rack to the middle position, use the same temperature, and increase the baking time by 4 – 5 minutes.

    Garnish with some freshly-grated parmesan, sprinkle with a bit of salt and pepper, and serve as a starch with your favorite protein, or simply eat them by themselves, with a nice cold chardonnay. Enjoy.
