These are great-tasting fries that are insanely easy to make. The biggest challenge was to get the oven temperature, thickness of the fries, and time correct. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 large potato, russet variety
- 1 quart water
- 1 cup vinegar, plain variety
- 1 tablespoon salt, kosher variety, and more for the fries
- - black pepper, freshly ground, to taste
- 3 tablespoons grapeseed oil

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Cut the potato into 1/4-inch (.6cm) matchsticks.

Step 4Chef’s Note: If you have a mandolyn this is a great time to break it out.

Step 5Chef’s Note: I tried several different sizes for these fries, and the size is very important to the temperature and timing of the baking.

Step 6Add the water and vinegar to a pot, and bring up to a boil, then add the salt, and stir to combine.

Step 7Add the fries, and allow to boil for 3 - 4 minutes.

Step 8Place a rack in the middle position, and preheat the oven to 450f (230c).

Step 9Remove from the water, drain on paper towels, and allow to dry out for about 10 minutes.

Step 10Add the oil to a medium bowl, and season with some salt, and pepper. Then add the fries, and toss until coated.

Step 11Place on a parchment-lined baking sheet, fitted with a wire rack.

Step 12Place into the preheated oven for 15 – 18 minutes, or until beginning to brown.

Step 13PLATE/PRESENT

Step 14Add to a nice plate with some side sauces (like ketchup), and serve while still nice and warm. Enjoy
