These are great-tasting fries that are insanely easy to make. The biggest challenge was to get the oven temperature, thickness of the fries, and time correct. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 large potato, russet variety
  • 1 quart water
  • 1 cup vinegar, plain variety
  • 1 tablespoon salt, kosher variety, and more for the fries
  • - black pepper, freshly ground, to taste
  • 3 tablespoons grapeseed oil

    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Cut the potato into 1/4-inch (.6cm) matchsticks.
  • Step 4
    Chef’s Note: If you have a mandolyn this is a great time to break it out.
  • Step 5
    Chef’s Note: I tried several different sizes for these fries, and the size is very important to the temperature and timing of the baking.

    Add the water and vinegar to a pot, and bring up to a boil, then add the salt, and stir to combine.
  • Step 7
    Add the fries, and allow to boil for 3 - 4 minutes.
  • Step 8
    Place a rack in the middle position, and preheat the oven to 450f (230c).
  • Step 9
    Remove from the water, drain on paper towels, and allow to dry out for about 10 minutes.
  • Step 10
    Add the oil to a medium bowl, and season with some salt, and pepper. Then add the fries, and toss until coated.
  • Step 11
    Place on a parchment-lined baking sheet, fitted with a wire rack.
  • Step 12
    Place into the preheated oven for 15 – 18 minutes, or until beginning to brown.

    PLATE/PRESENT

    Add to a nice plate with some side sauces (like ketchup), and serve while still nice and warm. Enjoy
