side dish essentials:comforting bacon potato salad
Everyone has their idea of a nice comforting potato salad, and this is mine… I’m not a big fan of onions, in my potato salad, so I didn’t add any. In addition, I don’t add celery, so that’s gone also. Anyway, like I said, we all have our own ideas on the ingredients of a good potato salad. Oh, I did manage to add some of the "B" word... What's comfort food without bacon. So, you ready… Let’s get into the kitchen.

How To Make side dish essentials:comforting bacon potato salad
-
Step 1PREP/PREPARE
-
Step 2Gather your Ingredients (mise en place).
-
Step 3Add the bacon to a small pan over medium heat.
-
Step 4Cook until it begins to crisp, drain on paper towels, and reserve.
-
Step 5Place the potatoes into a large pot, and cover with about 2 inches (5cm), of water.
-
Step 6Bring the water up to a simmer and add about a tablespoon of salt.
-
Step 7Allow the potatoes to gently simmer until a paring knife can be easily inserted into the flesh, about 20 – 25 minutes.
-
Step 8When the potatoes are cool enough, peel, chop into cubes, and place into a bowl.
-
Step 9Dice the hardboiled egg, and add to the potatoes.
-
Step 10Chef’s Note: Peeling the potatoes is totally optional.
-
Step 11Toss the potatoes with the vinegar, a bit of salt, and let stand for 5 minutes.
-
Step 12Chef's Note: I usually start by tossing the potatoes with 1 tablespoon of vinegar, and add a bit more if they look dry. The vinegar will really bring out the taste of the potatoes.
-
Step 13Chef's Tip: If you REALLY want to go crazy, add about a teaspoon of the bacon grease to the potatoes, and toss with vinegar... BAD ANDY
-
Step 14Meanwhile, combine the mayonnaise, sour cream, mustard, relish, dill, and parsley in a small bowl.
-
Step 15Season with salt, and pepper, to taste, and then add the yummy bacon.
-
Step 16Gently fold the dressing into the potatoes.
-
Step 17PLATE/PRESENT
-
Step 18Place the potato salad in a nice serving bowl, sprinkle with some paprika, and serve while still warm. Enjoy.
-
Step 19Keep the faith, and keep cooking.
