side dish essentials:comforting bacon potato salad

Everyone has their idea of a nice comforting potato salad, and this is mine… I’m not a big fan of onions, in my potato salad, so I didn’t add any. In addition, I don’t add celery, so that’s gone also. Anyway, like I said, we all have our own ideas on the ingredients of a good potato salad. Oh, I did manage to add some of the "B" word... What's comfort food without bacon. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 slices bacon, cubed, i prefer apple-wood smoked
  • 1 pound small red potatoes
  • 1 - 2 tablespoons vinegar, apple cider variety
  • 1 large hardboiled egg
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon mustard, yellow or brown, your choice
  • 2 tablespoons relish, dill or sweet, your choice
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon italian parsley, chopped
  • - salt, kosher variety, to taste
  • - black pepper, freshly ground, to taste
  • - sweet paprika, for garnish
  • OPTIONAL ITEMS
  • - chopped red onions
  • - chopped celery
  • - additional herbs (chives, tarragon, cilantro)

How To Make side dish essentials:comforting bacon potato salad

    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Add the bacon to a small pan over medium heat.
  • Step 4
    Cook until it begins to crisp, drain on paper towels, and reserve.
  • Step 5
    Place the potatoes into a large pot, and cover with about 2 inches (5cm), of water.
  • Step 6
    Bring the water up to a simmer and add about a tablespoon of salt.
  • Step 7
    Allow the potatoes to gently simmer until a paring knife can be easily inserted into the flesh, about 20 – 25 minutes.

    When the potatoes are cool enough, peel, chop into cubes, and place into a bowl.

    Dice the hardboiled egg, and add to the potatoes.

    Chef’s Note: Peeling the potatoes is totally optional.

    Toss the potatoes with the vinegar, a bit of salt, and let stand for 5 minutes.

    Chef's Note: I usually start by tossing the potatoes with 1 tablespoon of vinegar, and add a bit more if they look dry. The vinegar will really bring out the taste of the potatoes.

    Chef's Tip: If you REALLY want to go crazy, add about a teaspoon of the bacon grease to the potatoes, and toss with vinegar... BAD ANDY
  • Step 14
    Meanwhile, combine the mayonnaise, sour cream, mustard, relish, dill, and parsley in a small bowl.

    Season with salt, and pepper, to taste, and then add the yummy bacon.

    Gently fold the dressing into the potatoes.

    Place the potato salad in a nice serving bowl, sprinkle with some paprika, and serve while still warm. Enjoy.
